From the Tabasco-tinted chilipepper rockfish to the bottom-dwelling monkfish, once-depleted fish species are resurgent, swimming back to store shelves and restaurant menus after long absences.

The fishery, which includes the chilipepper, has since recovered, and it’s now home to enough seafood to feed 17 million Americans a year.

The chilipepper has bright red skin, and it’s sometimes known as the Pacific red snapper – even though it’s not a snapper.

The species spans from Baja California to British Columbia, but it was declared a disaster in 2000 as the chilipepper and about 90 other kinds of fish were deemed on the verge of collapse.

This group includes Bocaccio, yellowtail, chilipepper, widow, blackgill and shortraker rockfish.
