Heritage Kulfi, a new brand being introduced at the store Kalustyan’s, in Manhattan, comes in several intense and alluring flavors like saffron, rosewater and cardamom-chai.

Kulfi, an Indian frozen dessert, is distinguished by its velvety texture and a density that comes from its having been churned only minimally, if at all.

The pairing’s use in dessert was well documented during the Mughal Empire, when kesar pista kulfi was served to royals, according to “A Historical Dictionary of Indian Food” by the food historian K.T.

Kumar also offers a satisfying pistachio kulfi and chewy, snow-white coconut “medallions” reminiscent of macaroons.
