Seed oils contain mostly unsaturated fat, the “good” kind of fat.

According to Dr Ahn, it has a low, unsaturated fat content and could have served as a healthy substitute for beef or pork.

The process, known as hydrogenation, ultimately yields a type of unsaturated fat called trans fat, which is commonly formed when liquid oils are made into solid fats.

"According to study, palm oil has nearly equal amounts of saturated and unsaturated fat," he said.

They also contain large amounts of fiber, unsaturated fat, antioxidants, omega-3 fatty acids and other nutrients that have been shown to improve gut and metabolic health and reduce inflammation, all of which can affect the brain.
