Achote is best known in France, under the Name of Roucou, and is a sort of Red which the Dyers and Painters make use of.

Roucou is planted of a Kernel much after the same manner as the Cocao-Tree.

The Water   being settled, they pour it off gently by degrees, they dry the Colour in the Shade that fell to the bottom of the Vessel; and this is the true Roucou, without any Mixture.

This was a famous plant—Bixa orellana Roucou; and that pulp was the well-known annotto dye of commerce.

In America the seeds are called achote or roucou.
